Since signing up with eMeals, I’ve had 3 weeks worth of menus to look through.  I’ve only gone through two, ruled out ones I will not eat, or that will be  too in depth to make that I want to save for later when I have some more confidence for the kitchen.  We set our eMeals to low carb, and they have some awesome choices!

Three new meals we will be trying this week:

  • FLORENTINE FISH (2 servings @ 4 net carbs each) paired with green beans and mashed potatoes. I had this Sunday for dinner – 4 out of 5 yums! 
  • CHICKEN WITH ARTICHOKES & MUSHROOMS (6 servings @ 5 net carbs each)
  • MEXI-PITAS (2 servings @ 15 net carbs each)

I would share the recipe, but I’m not sure how they feel about that… so I’m hesitant to.  I will link to the recipe where it’s posted elsewhere online :)

I am on the hunt for red sauce for the first one.  I’m also having pasta and garlic bread this week, as well as pancakes one day this week.  Realistically we also bought a frozen pizza along with extra pancake mix, because if a recipe goes wrong, I want something on hand to avoid being tempted to go out to eat.

I’m probably going to check out some of their other meal plans. They have quite a variety; Paleo, classic, gourmet, portion control, vegetarian.  Pretty much something for everyone.
